This was a clean out the fridge recipe, I didn’t have much on hand, no time to run to the store and my body was asking for a satisfying meal. Enter quinoa which is one of the few plant sources for complete protein, it’s also very satisfying, keeps you feeling full and is super tasty!
I always have black beans in the pantry and digging in the bottom of the produce bin I found a bell pepper and some carrots. Ok, here we go.
Ingredients:
1 cup Quinoa, thoroughly rinsed and drained
2 cups veggie broth
1/2 Red onion, diced
2 Cloves garlic , minced
Olive oil
2-3 Carrots, sliced into thin rounds
1/2 Red bell pepper, diced
1 cup cooked black beans
Handful of raisins
Salt & Pepper to taste
Sweet Red Chili Sauce (optional, but oh so tasty)
Directions:
In a medium sauce pan, saute half the diced onion 2-3 mins, add the garlic and saute additional 1 min. Add the quinoa and stir to coat. Pour in the broth and bring to a boil, then reduce to a simmer and cover for 15 mins or until all fluid is absorbed. Meanwhile, in a medium frying pan, saute the carrots 3-4 mins, then add the bell pepper and remaining onion. Saute for another 3-4 mins. Toss in a handful of raisins and remove from heat.
Once quinoa is cooked, toss in the sauted veggies and season to taste with salt and pepper. Serve with the beans and if desired lightly drizzle on some sweet red chili sauce.
