So my hubby just had one of his wisdom teeth pulled and I needed to come up with something nutritious that he would be able to “eat”. He can barely open his mouth right now so I knew it had to be drinkable. I quickly searched “foods to eat after getting wisdom teeth removed” and came across a list on BuzzFeed of all places, the post was  called “24 Foods You Can Eat After Getting Your Wisdom Teeth Out”.  It was a surprisingly good list, though most of the recipes contained gluten or dairy if not both, however it did spark an idea and that’s how this delicious recipe was born.

Gluten Free, Vegan, & Paleo

Simple and delicious!

Ingredients: 

  • 1/2 a sweet yellow onion, finely chopped
  • 2-3 cloves of garlic, minced
  • 2 tbsp extra virgin olive oil
  • 3 carrots, peeled and chopped
  • 32 oz roasted tomatoes
  • 2 cups vegetable broth
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 cup milk (I used unsweetened almond milk)
  • a pinch of red pepper flakes
  • 1 tbsp pure maple syrup
  • salt and pepper to taste

Directions: 

In a large dutch oven, heat olive oil over medium heat. Add onions and cook for 3-4 min until beginning to soften. Add in garlic and carrots. Cook an additional 2 mins. Pour in broth and add oregano and basil. Bring to a boil then reduce the heat and simmer covered for 15-20 mins until carrots are tender. Add in roasted tomatoes and return to a boil, reduce heat and simmer an additional 20 mins to allow flavors to meld (the longer the better). Remove from heat and blend until smooth (I use an immersion blender but a regular blender or food processor would also work, though you’ll need to let it cool some and do it in small batches).

Add in the milk, maple syrup, and red pepper flakes and blend again.

If desired, season with salt and pepper.
